Asparagus Pie

Ingredients:

  • Pie Pastry
  • 2 lbs asparagus
  • 1-1/2 cups Béchamel sauce
  • 3 tbs butter
  • 3 tbs flour
  • 1/2 onion minced
  • 2-1/2 cups hot milk
  • peppercorns
  • 2 tsp thyme
  • 1 small bay leaf
  • sea salt
  • grated nutmeg to taste
  • 2 oz grated chedder cheese

Béchamel Sauce:

  1. On top of a double boiler heat butter until bubbly
  2. Add onion and let cook 3-4 minutes
  3. Stir in flour
  4. Cook a bit more then begin adding milk and stir with a whisk
  5. Add a few Peppercorns, thyme and small bay leaf, and nutmeg
  6. Let cook slowly 10-15 minutes and strain through a sieve

Asparagus Pie

  1. Make Pastry and bake in a deeper pie pan for 20 minutes
  2. Clean asparagus and cut into 1 inch pieces
  3. Steam until tender about 10 minutes
  4. Put asparagus onto pie shell and pour sauce over it
  5. Sprinkle on cheese and bake in medium oven 300-325 for 15 minutes
  6. Serve hot and enjoy
