Hawaiian Vegetables

Ingredients

  • 3 carrots cut into 1 inch pieces
  • 1 large sweet potato cut into 1 inch chunks
  • 8 oz pineapple chunks
  • 1/4 cup Clovermead Summer Blossom Honey
  • 1 cup apple juice
  • 1 tsp ginger
  • 1/4 tsp salt
  • Pinch pepper
  • 1/4 - 1/3 cup sliced almonds
  • 1 tbsp. Margarine 

Directions

  1. Place carrots and sweet potatoes in bottom of a 2 quart baking dish
  2. Drain pineapple reserving juice
  3. Whisk together juices and honey
  4. Pour over the vegetables
  5. Sprinkle with seasoning and nuts
  6. Bake covered at 350 F oven for about 1 hours or until tender
  7. Add pineapple when almost done
