Quai Du Vin Estate Winery

Maple Wine Custard

Soak

  • 1 Tbsp gelatin in 1/4 cup water 

Prepare

  • 1/4 cup maple syrup
  • 1/4 cup Quai du Vin Maple Wine 

Place in top of double boiler with:

  • 1 cup hot milk
  • 1/4 cup sugar
  • 1/4 tsp salt 
  • Stir over boiling water until these ingredients are dissolved
  • Pour part of this over 3 beaten egg yolks
  • Return the sweetened yolks to the double boiler
  • Stir until it coats the spoon heavily
  • Stir in the soaked gelatin until it is dissolved
  • Cool the custard
  • Add: 1 tsp vanilla
  • Whip and fold in 1 cup whipping cream
  • Chill at least 12 hours.
